It depends on what you class as old school, are we talking 50's B movies or movie serials of the 30s and 40s, or perhaps more recent stuff of the 70s and 80s (like Star Wars or Alien)? I just picked up a copy of John Landis' An American Werewolf in London today, does that count?

Suspiria
Invasion of the Body Snatchers
Don't Look Now
The Wicker Man
The Devil Rides Out
The Omen
The Thing
Psycho (and Alfred Hitchcock in general)
The Shining

I'm not that into sci-fi so I don't have any recommendations, but the above are all excellent, classic horror films.

I don't know if you'd call it old school, but Event Horizon is a tense, suspenseful sci-fi/horror.

The Thing is a must-see (John Carpenter'). Kurt Russel is great as always. There are too many great parts to mention.

The Shining has some really great scenes (courtesy of Jack Nicholson) and is just a fascinating movie

Pyscho, still to this day, holds suspense and is just a real pleasure to watch. Very well made. Norman Bates is awesome.

American Werewolf in London. This is THE werewolf movie. It also has the best werewolf transformation ever done, no CGI.

The Exorcist. What can I say?

Return of the Living Dead.

Oh crap, I almost forgot. One of my favourite internet personas has done two marathons on classic horror movies, going through the silent movies right up to modern movies.
http://www.cinemassacre.com/new/?page_id=1373 - number 1 and 3 covers about 60 movies between them. The first is all classics, while no3 is more obscure. Definitely check it out.

The Shining-what everyone else said
The Night of the Hunter-Robert Mitchum is the creepiest thing ever in this
Cape Fear (original)-scratch that, he's creepier in this
The Innocents-pretty much the most traumatizing movie I've ever seen

Scanners

low budget old school classic! From the guy that made "The Fly" (1986), starring Jeff Goldblum <---another good movie.

You absolutely cannot go wrong with "The Thing" or either of the first two flicks in the Alien series.

These have probably all been mentioned, but The Thing, Invasion of the Body Snatchers, The Blob, and Plan 9 From Outer Space are all amazing.

Zombi 2 and The Eyes Without a Face are foreign. but also excellent. Old Twilight Zone is always good as well.

Aliens
------
Fire In the Sky - wicked alien abduction film, based on a true story

Sci Fi
------
Dune - based on the book, good dark fastasy look to it. very 80s.
Existenz - about futuristic virtual reality technology

Horror
--------
Race With the Devil - two couples go RVing, witness something terrifying and pay for it for the rest of their vacation. classic.

Phenomena!!! - a Dario Argento film about a girl who can communicate telepathically with bugs, and helps to solve muders in this small german town by doing so. very scary. very odd. very low-budget. wicked soundtrack.

Poltergeist. Classic.

Rosemary's Baby. Classic, again. But very hard to watch in its creepiness.

Polanski's The Tenent is also crazily good.

Beetlejuice. It's just fun.
