Mine would be Tonie Joy of Moss Icon/The Convocation Of.../etc., he's absolutely amazing. I once saw someone describe him as "my favorite guitarist next to Jimi Hendrix." Unfortunately he always seems to be in these ridiculously obscure underrated bands that don't last for very long....
